Marshmallows - cooking recipe
Ingredients

1 box Knox #1 or plain gelatine (4 envelopes)
16 Tbsp. cold water
4 c. granulated sugar
12 Tbsp. hot water
pinch of cream of tartar (1 tsp. vinegar will do instead)
1 tsp. vanilla (or disired flavoring)
food coloring (if desired to go with flavoring)
Preparation

Put gelatine and cold water in large crockery bowl; let stand. Cook sugar, hot water and cream of tartar until it threads well. When it threads, hard ball stage, add to gelatine and beat constantly for about 15 minutes on medium speed with electric mixer.
Add vanilla and coloring; mix.
Line pan with buttered waxed paper and sprinkle heavy with powdered sugar.
Pour the marshmallow mixture into it and sprinkle top with more powdered sugar.
It may be cut with a knife or scissors when cool.
Cut off in strips and then cut the strips into pieces.
Dip each piece in powdered sugar and the pieces won't stick together.
Note:
I use a 9 X 13 pan.
