Hot Light Potato Salad - cooking recipe

Ingredients
    4 c. unpeeled thinly sliced red potatoes
    1 Tbsp. margarine
    1 c. chopped onion
    1/2 c. mayonnaise
    1/3 c. apple cider vinegar
    1 Tbsp. sugar
    1/2 tsp. salt
    1/4 tsp. pepper
    1 Tbsp. parsley
Preparation
    Cook potatoes in boiling water to cover 8 to 10 minutes or until tender.
    Drain and set aside.
