Vegetable Potato Soup - cooking recipe

Ingredients
    4 c. beef stock
    1 (15 oz.) can mixed vegetables, drained
    1 (16 oz.) can whole white potatoes, drained and diced
    1 medium onion, chopped
    3 slices bacon, sliced
    1 c. French fried onion rings
    salt and pepper to taste
Preparation
    Saute bacon until light brown and crisp.
    Drain and set aside. Saute onion in drippings until golden.
    Combine stock, onion and bacon in soup kettle.
    Add vegetables and potatoes.
    Simmer for 20 minutes to blend flavors.
    Season to taste.
    Heat onion rings under broiler.
    Use onion rings as garnish.
    Serves 6.
