Lettuce Loaf Bread - cooking recipe

Ingredients
    1 c. sugar
    1/2 c. oil
    2 eggs
    1 1/2 tsp. grated lemon rind
    1 1/2 c. all-purpose flour
    2 tsp. baking powder
    1/2 tsp. salt
    1/8 tsp. ginger
    1 c. lettuce, finely chopped
    1/2 c. nuts, chopped
Preparation
    Beat sugar, oil, eggs and lemon rind.
    Add sifted flour, baking powder, salt, ginger and lettuce to sugar mixture.
    Beat well. Stir in nuts. Bake in greased 9 x 5-inch loaf pan at 375\u00b0 for 55 minutes. Cool 15 minutes in pan. Remove and sprinkle with powdered sugar, if desired.
