The Best Grilled Salmon Steaks - cooking recipe

Ingredients
    8 (3/4-inch) salmon steaks or fillets
    3/4 c. dry vermouth
    3/4 c. olive oil
    1 1/2 Tbsp. lemon juice
    1 Tbsp. minced parsley
    3/4 tsp. salt
    1/4 tsp. thyme
    1/4 tsp. marjoram
    1/8 tsp. sage
    dash of freshly ground pepper
    hickory wood chips (optional)
Preparation
    Place salmon in a large pan.
    Mix all other ingredients (except wood chips) and pour over top.
    Allow to marinate 3 to 4 hours, turning once.
    Soak wood chips in water for 1 to 2 hours. Grill over charcoal, adding wood chips onto fire at same time as steaks.
    Cook about 5 minutes per side, brushing frequently with reserved marinade.
