Golden Carrot Ring - cooking recipe

Ingredients
    5 c. grated raw carrots
    4 eggs
    2 c. half and half
    1 tsp. salt
    1/2 tsp. pepper
    1 tsp. sugar
    1 Tbsp. lemon juice
    1 c. shredded almonds
    butter to grease spring mold
Preparation
    Cook carrots in boiling water, then drain thoroughly.
    Mix all other ingredients together and combine with carrots.
    Spread butter thoroughly over inside of 9-inch ring mold.
    Line with greased wax paper, then pour carrot mixture into mold and bake in 325\u00b0 oven for 40 minutes.
    Turn onto a large plate and fill center with any other vegetable, such as peas, mushrooms, etc.
    Serves 12 to 14 easily for a buffet.
