Zucchini Goulash - cooking recipe
Ingredients

1 lb. ground beef
1/4 c. chopped onion
1 pkg. macaroni and cheese dinner
1 medium zucchini, cut into 1-inch cubes (unpeeled)
4 medium tomatoes, peeled and cut in quarters
1/2 to 1 pkg. taco or spaghetti seasoning mix
1/4 tsp. pepper
1 Tbsp. brown sugar (optional)
1/4 c. margarine
1/4 c. milk
Preparation

Cook macaroni as directed on package, adding the cubes of zucchini and peeled tomato quarters.
Drain.
Brown ground beef and onion.
Drain off excess fat.
Add cooked macaroni, zucchini and tomatoes.
Add pepper, brown sugar, margarine, milk, packet of cheese and seasoning mix to taste.
Stir to combine all ingredients.
Simmer 10 to 15 minutes, uncovered.
