Brown Rice And Broccoli Casserole - cooking recipe

Ingredients
    1 medium onion, chopped
    3 cloves garlic, finely chopped
    1 Tbsp. olive oil
    1 1/2 c. cooked brown rice (quick cooking brown rice, optional)
    1 1/4 c. spring water (if quick rice is used)
    1/2 c. natural orange juice
    1/4 c. sliced water chestnuts
    3 Tbsp. tamari or low sodium soy sauce
    2 c. broccoli florets
    1 c. sliced mushrooms
Preparation
    In a microwave-safe dish, combine onion, garlic and olive oil. Cook, uncovered, on High for 1 minute.
    Stir in rice (if uncooked rice is used, add water), orange juice, water chestnuts and tamari.
    Microwave, uncovered, on High for 5 minutes.
    Stir in broccoli and mushrooms.
    Cover and cook on High 4 to 5 minutes until liquid is absorbed.
