Rhubarb Bread - cooking recipe
Ingredients

1 1/3 c. brown sugar
2/3 c. vegetable oil
1 beaten egg
1 tsp. vanilla
1 c. buttermilk or sour cream
2 1/2 c. flour
3/4 tsp. salt
1 tsp. baking soda
1/2 tsp. cinnamon
1 1/2 to 2 c. finely diced rhubarb (1/4-inch cuts)
1/2 c. nuts, chopped
Preparation

Mix together sugar and oil.
Blend in egg, vanilla and milk. In separate bowl, combine flour, salt, cinnamon and baking soda. Add to moist ingredients.
Stir in rhubarb and nuts.
Divide batter between 2 well-greased 8 x 4-inch loaf pans.
Bake at 350\u00b0 for about 45 minutes or until bread tests done with wooden pick. Turn out onto rack to cool.
Yield: 2 loaves.
