Zucchini Cake And Glaze - cooking recipe

Ingredients

3 eggs, well beaten
1 c. vegetable or canola oil
2 c. sugar
2 tsp. vanilla extract
2 c. all-purpose flour
3 tsp. cinnamon
2 tsp. salt
1/2 tsp. baking powder
2 c. peeled, coarsely grated zucchini

Preparation

Combine eggs, oil, sugar and vanilla; mix well.
Combine dry ingredients; add to oil mixture, mixing well.
Stir in grated zucchini.
Bake at 350\u00b0 for 1 hour or until done in greased and floured 10-inch Bundt pan.
Allow to cool 20 minutes before removing from pan.
Glaze, if desired.
