Fish Brine - cooking recipe

Ingredients

1 qt. water
1/2 c. non-iodized salt
1/2 c. sugar (1/4 brown, 1/4 white)
1 bay leaf

Preparation

Soak overnight.
Cover fish with brine.
Wash salt off, air dry and smoke.
