Irish Fruit Soda Bread - cooking recipe

Ingredients
    2 c. brown sugar, packed
    1 (15 oz.) box seedless raisins
    1 (15 oz.) box golden raisins
    1 (No. 2) can crushed pineapple
    2 to 2 1/2 c. water
    3/4 c. margarine
    dash of lemon juice
    1 small bottle maraschino cherries, drained
    4 oz. Irish whiskey
    3 1/2 c. all-purpose flour
    1 1/2 tsp. soda
    3 tsp. baking powder
    1 tsp. mace
    1/2 tsp. cloves
    1 tsp. allspice
    2 eggs, well beaten
Preparation
    Combine first 9 ingredients in a saucepan, including juice from pineapple.
    Bring to a boil over medium heat.
    Cook 10 minutes, then reduce heat and simmer 5 minutes.
    Cool.
    Into a large mixing bowl, sift together dry ingredients and spices.
    Add cooled raisin mixture and eggs.
    Beat well.
    Bake in a greased 10-inch tube pan or 2 loaf pans at 350\u00b0 for 1 hour or until a knife inserted in center comes out clean.
