Best-Ever Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    2 c. unpeeled, grated zucchini
    1 tsp. vanilla
    3 c. flour
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. baking powder
    2 tsp. cinnamon
    1/2 c. nuts, chopped
    1/2 c. raisins
    1/4 c. light rum
Preparation
    Mix together eggs, oil, sugar, zucchini and vanilla.
    Add remaining ingredients and mix well.
    Pour into greased loaf pans and bake at 325\u00b0 for 1 hour, or until a toothpick comes out dry when tested.
    Makes 2 loaves.
