Ginger Beer - cooking recipe

Ingredients
    2 lb. granulated sugar
    2 chillies
    3/4 oz. compressed yeast
    3 or 4 lemons (according to size)
    3 qt. boiling water
    4 qt. cold water
Preparation
    Dissolve the yeast in a little warm water with a teaspoon of the sugar.
    Place the sugar and chillies, the thin rind of the lemons with the juice in a large pan and pour over them the 3 quarts of boiling water.
    Add the cold water when all the sugar has dissolved, and then add the yeast.
    Allow to stand for 24 hours.
