Ingredients

2 c. all-purpose flour
4 tsp. baking powder
1 Tbsp. pumpkin pie spice
1 tsp. salt
1 c. butter or oleo, softened
1 c. brown sugar
2 eggs
2 tsp. vanilla
1 1/2 c. cooked squash
4 c. rolled oats
1 c. dark raisins
Preparation

Preheat oven to 350\u00b0.
Coat baking sheets with nonstick cooking spray.
In small bowl, combine flour, baking powder, pumpkin pie spice and salt.
In mixing bowl with electric mixer at high, beat butter and brown sugar until creamy.
Add eggs and vanilla; beat 1 minute.
Stir in squash.
Gradually stir in flour mixture, oats and raisins until combined.
Drop dough by 1/4 cupfuls onto baking sheets.
Bake 15 to 18 minutes until lightly golden.
Remove to wire racks.
Cool for 1 hour.
Repeat with the remaining dough. Makes about 3 dozen cookies.
