Zucchini Bread Or Muffins - cooking recipe

Ingredients
    3 c. flour
    1 tsp. salt
    1 tsp. baking powder
    1 tsp. baking soda
    1 Tbsp. cinnamon
    3 eggs
    1 3/4 c. sugar
    2 medium zucchini, shredded (2 c.)
    1 c. vegetable oil
    2 tsp. vanilla
    1/2 c. coarsely chopped pecans
Preparation
    Preheat oven to 350\u00b0 for loaves or 375\u00b0 for muffins.
    Beat eggs slightly and stir in sugar, oil, zucchini and vanilla.
    Add flour, salt, baking soda, baking powder and cinnamon.
    Stir in pecans.
    Pour into well-greased pan or paper liners.
    Bake loaves 50 minutes (makes 2).
    Bake muffins 24 minutes (makes 24).
