Parmesan Potato Casserole - cooking recipe

Ingredients
    12 potatoes, peeled and quartered
    1/2 c. margarine
    1 c. milk
    3 eggs, lightly beaten
    1/2 c. Parmesan cheese
    1/2 c. chopped parsley
    salt and pepper
Preparation
    Lightly grease shallow baking dish.
    Cook potatoes and drain. Return to pot, add butter and mash.
    Add milk, eggs, cheese, parsley, salt and pepper and mash until smooth.
    Spoon into prepared dish.
    Bake uncovered 35-45 minutes or until puffed and golden brown.
