Vegetable Frittata - cooking recipe

Ingredients
    4 1/2 tsp. olive oil
    1/4 c. chopped onion
    6 eggs
    1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
    3/4 c. (3 oz.) shredded Cheddar cheese
    1/2 tsp. salt
    1/8 tsp. black pepper
    dash of red pepper
    dash of nutmeg
Preparation
    Heat 3 teaspoons oil in skillet.
    Add onion; cook until tender.
    Remove onion and set aside.
    Lightly beat eggs in bowl. Add onion, spinach, cheese and seasonings.
    Heat 1 1/2 teaspoons oil in same skillet; add egg mixture.
    Cook 5 minutes or until browned lightly.
