Hearty Cabbage Soup - cooking recipe

Ingredients
    4 large slices day-old Italian bread
    2 c. shredded cabbage, packed
    2 medium onions, sliced
    2 cloves garlic, minced
    1 (16 oz.) can whole tomatoes, drained
    1/2 c. grated Parmesan cheese
    2 qt. chicken stock
    salt and pepper to taste
    minced Italian parsley
Preparation
    In a flameproof casserole with a tight fitting lid, layer bread, cabbage, onions and garlic.
    Spoon in tomatoes.
    Sprinkle cheese over top.
    Carefully pour stock into casserole so as not to disturb layers.
    Cook, covered, over medium heat for 30 minutes. Season to taste with salt and pepper.
    Sprinkle with parsley. Serve hot.
    Makes 6 servings.
