Mekluba - cooking recipe

Ingredients
    1 lb. meat or lamb, cut into 1 1/2-inch cubes or 1 lb. chicken pieces
    1 medium cauliflower
    1 medium eggplant
    2 medium onions, thinly sliced
    4 carrots, peeled and cubed
    4 medium potatoes
    1 large tomato
    2 c. long grain rice, washed and drained
    1 bay leaf
    1/2 tsp. sage
    1/2 tsp. allspice
    1 1/2 tsp. salt or to taste
    1 1/2 tsp. ground black pepper or to taste
    1/2 c. oil
    3 c. water
Preparation
    Saute onions in 1 1/2 teaspoons of oil until transparent. Remove onions and set aside.
    Place meat or poultry in reserved oil.
    Saute until lightly brown, then cover with water.
    Bring to a boil and skim off foam.
    Add 1/2 teaspoon of salt, 1/2 teaspoon of pepper and bay leaf.
    Simmer for 1 hour.
    Add onions.
    Reserve the stock.
