Lime Soup - cooking recipe

Ingredients
    1 (3 to 3 1/2 lb.) chicken
    10 c. water
    6 peppercorns
    3 sprigs parsley
    1 stalk celery
    1 medium onion
    2 tsp. salt
    1/2 tsp. thyme
    2 Tbsp. oil
    1 medium onion, chopped
    1 medium green pepper, chopped
    2 tomatoes (fresh or canned), chopped
    juice of 2 1/2 limes
    3 Tbsp. coriander or fresh parsley
Preparation
    Simmer for 1 1/2 hours the first 8 ingredients.
    Remove chicken from bones.
    Strain broth.
    Saute in oil the onion and pepper.
    Add the tomatoes and cook for 5 minutes.
    Add broth and juice of limes. Stir in coriander or parsley.
    Simmer for 20 minutes.
    Add chicken. Heat through.
    Garnish with tortilla chips and lime slices and sprinkle lightly with cheese.
    Makes 3 quarts.
