Red Beans And Rice - cooking recipe

Ingredients
    1 lb dried red beans, rinsed and sorted over
    3 Tbsp bacon grease
    1/4 c chopped tasso, or ham
    1 1/2 c yellow onion, chopped
    3/4 c celery, chopped
    3/4 c green bell peppers, chopped
    1/2 tsp each, salt and pepper
    pinch cayenne
    3 bay leaves
    2 Tbsp chopped fresh parsley
    2 tsp fresh thyme
    1/2 lb smoked sausage, split in half lengthwise and cut into 1 -inch pieces
    1 lb smoked ham hocks
    3 Tbsp chopped garlic
    10 c chicken stock, or water or (can broth)
    4 c cooked white rice
    1/4 c chopped green onions, garnish
Preparation
    Place the beans in a large bowl or pot and cover with water by 2 inches. Let soak for 8 hours or overnight. Drain and set aside.
