Running Board Zucchini Chicken - cooking recipe
Ingredients

1 broiler-fryer, quartered
3 Tbsp. olive oil
1 lb. tomatoes, finely chopped
1/2 c. olive oil
2 green peppers, finely chopped
2 medium zucchini, coarsely chopped
1 small onion, coarsely chopped
bouquet garni (mixed herbs in cheesecloth bag)
salt to taste
flour to thicken
Preparation

Brown the chicken pieces in the 3 tablespoons of olive oil. Remove pieces from pan and add all other ingredients, except bouquet garni, salt and flour.
Fry briefly, stirring constantly. Add chicken and bouquet garni and simmer, covered, until chicken is done, about 30 minutes.
Remove bouquet garni.
Season to taste with salt.
Thicken with a flour and water paste, if desired. Makes 4 servings.
