Richard Simmons' Classic Citrus Salad - cooking recipe

Ingredients
    1 Tbsp. natural rice vinegar
    1/4 tsp. Dijon style mustard
    1/4 tsp. sugar
    dash each: salt and pepper
    1/2 tsp. olive oil
    2 c. fresh spinach leaves, washed, dried, torn and chilled
    1 small orange, peeled and segmented
    2 Tbsp. finely sliced red onion
    3 walnut halves, chopped coarsely
Preparation
    To make dressing, whisk together vinegar, mustard, sugar, salt, pepper and olive oil.
    To make salad, arrange remaining ingredients in serving bowl.
    Pour dressing over salad.
    Toss.
