Broccoli Bread - cooking recipe

Ingredients
    1 c. egg substitute
    3/4 c. fat-free cottage cheese
    3/4 c. fat-free sour cream
    2 Tbsp. butter, melted
    3/4 tsp. salt
    1 1/2 c. finely chopped onion
    1 (10 oz.) pkg. frozen broccoli (thawed & drained)
    1 (8.5 oz.) pkg. corn muffin mix (I use Jiffy)
    Cooking spray
Preparation
    Preheat oven to 400\u00b0.
    Combine first 5 ingredients in a large bowl.
    Stir in the onion, broccoli, and muffin mix, stir until well blended.
    Pour into a 13 x 9 inch baking pan coated with cooling spray.
    Bake for 27 minutes or until set.
    If using a glass baking dish lower temperature by 25 degrees.
    I serve this dish at breakfast potluck but it is great anytime of day! Enjoy hot or cold.
