Light As Lead Pancakes - cooking recipe

Ingredients
    2 c. whole wheat pastry flour
    1/2 tsp. baking soda
    2 to 3 tsp. cinnamon
    1/2 c. apple juice
    2 egg whites, lightly beaten
    1/2 c. skim milk
    1 Tbsp. canola oil
Preparation
    Mix the flour, soda and cinnamon in a medium mixing bowl.
    Add apple juice and egg whites.
    Slowly add milk, stirring briskly, until batter is of a pourable consistency.
    Warm frying pan and lightly grease with canola oil.
    Drop batter by 1/8 cup onto pan. Cook on both sides.
    Top with fruit yogurt, applesauce, heated jam thinned with juice or maple syrup.
    Serves 5 to 6.
