Cranberry Ring Salad - cooking recipe
Ingredients

2 c. cranberries
1 1/2 c. cold water
1 c. sugar
1 Tbsp. unflavored gelatin
1/2 c. chopped nuts
3/4 c. diced celery
lettuce
mayonnaise
Preparation

Wash cranberries; add 1 cup cold water. Cook until tender. Add sugar and cook for 5 minutes. Soften gelatin in 1/2 cup cold water; dissolve in hot cranberries and add salt.
Chill until mixture begins to thicken. Add nuts and celery. Mix thoroughly. Pour into oiled ring mold. Chill until firm. Unmold and place on a large salad plate. Place light lettuce around salad, arrange shrimp in center or serve on a bed of chicory on individual plates and garnish with mayonnaise. Serves 8.
