Black Beans And Rice - cooking recipe

Ingredients
    1 lb. black beans
    1/4 lb. ham for seasoning
    1 large onion, chopped
    1 clove garlic, minced
    2 green peppers, chopped
    1 bay leaf
    1/8 tsp. oregano
    1 tsp. salt
    3 to 4 c. cold water
    2 pkg. yellow rice
    chopped green onions, fat-free sour cream and tomato for garnish (optional)
Preparation
    Wash beans thoroughly.
    Cover with water and put in large pot to soak overnight.
    Drain beans and place in crock-pot with 3 to 4 cups of water.
    Add all other ingredients, except the rice.
    Cook on high for 1 hour, then cook 8 to 10 hours on low.
    Remove bay leaf.
    Cook rice according to directions on package.
    Serve beans over rice.
    Garnish as desired.
    This is a low-fat, high fiber meal.
