Nick'S Favorite Chicken Enchiladas - cooking recipe

Ingredients
    1 (6 oz.) can chicken (white)
    1 (10 oz.) can cream of chicken soup
    6 to 8 oz. sour cream
    1/2 c. scallions
    peppers to taste (jalapeno, green chile, etc.)
    12 (6-inch) corn tortillas
    1 c. corn oil
    1 c. grated cheese (Monterey Jack or Cheddar)
Preparation
    Mix chicken, soup, sour cream, scallions and, if desired, peppers.
    Heat thoroughly.
    Set aside.
