Diabetic Apple Or Pear Pie - cooking recipe

Ingredients
    4 c. peeled cored and sliced apples or pears
    1/2 tsp. cinnamon
    2 to 2 1/2 Tbsp. tapioca
    2 Tbsp. vegetable shortening, oil or lard
    1/2 to 3/4 c. unsweetened pineapple juice concentrate or unsweetened apple juice concentrate
    2 (9-inch) pie shells, unbaked
Preparation
    Preheat oven to 350\u00b0.
    In a large bowl, stir together fruit, cinnamon, tapioca, shortening and concentrate; allow mixture to sit for 10 minutes.
    Pour mixture into pie shell; put on top crust.
    Bake 1 hour or until top crust is golden.
