Ham-Stuffed Manicotti - cooking recipe
Ingredients

8 manicotti shells
1/2 c. chopped onion
1 Tbsp. vegetable oil
3 c. ground fully cooked ham (1 lb.)
1 (4 oz.) can sliced mushrooms, drained
1 c. (4 oz.) shredded Swiss cheese, divided
3 Tbsp. grated Parmesan cheese
1/4 to 1/2 c. chopped green pepper
3 Tbsp. butter or margarine
3 Tbsp. flour
2 c. milk
paprika
chopped fresh parsley
Preparation

Age fresh duck 3 to 5 days in refrigerator.
Bone duck breasts.
With breast bone up, slit meat along ridge of bone, gently scraping and cutting meat away from breast bone, making one perfect \"fillet\" from each side of breast.
(Bones may be used to make stock, if desired.)
