Diabetic - Pioneer Cornbread - cooking recipe
Ingredients

1 egg
1 c. skim milk
2 Tbsp. lo-cal maple syrup
2 Tbsp. margarine, melted
2/3 c. cornmeal
3/4 c. flour
1 Tbsp. baking powder
1 tsp. salt
Preparation

Beat egg until light and lemon colored.
Add skim milk, maple syrup and margarine.
Combine cornmeal, flour, baking powder and salt in large bowl; stir to blend.
Gradually add flour mixture to liquid.
Pour into greased 8-inch square pan.
Bake at 425\u00b0 for 20 to 25 minutes.
Yields 9 squares.
