Rice And Corn Scallop - cooking recipe

Ingredients
    3 Tbsp. butter or margarine
    1 Tbsp. minced onion
    3 Tbsp. flour
    1 c. milk
    1 c. cooked white rice
    1 can (8 oz.) whole kernel corn, undrained
    salt and pepper to taste
    1/2 c. grated sharp Cheddar cheese
    paprika
    minced parsley
    1 small can diced green chilies (optional, added to rice and corn)
Preparation
    In a medium saucepan over low heat melt butter; add onion and cook a few minutes.
    Stir in flour.
    Slowly add milk, keeping smooth.
    Cook, stirring, until thickened and bubbly.
    Stir in rice, corn, salt and pepper.
    Turn into an ungreased 1-quart casserole.
    Sprinkle with cheese and paprika.
    Bake at 350\u00b0 about 20 minutes.
    Sprinkle edges of casserole with parsley.
