Fruit Cake For Diabetics - cooking recipe
Ingredients

2 c. water
2 c. raisins
1 c. unsweetened applesauce
2 eggs
2 Tbsp. liquid Sweeta
3/4 c. cooking oil
1 tsp. soda
2 c. all-purpose flour
1 1/4 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla flavoring
Preparation

Cook raisins in water until water disappears.
Add applesauce, eggs, Sweeta and oil.
Mix well.
Combine dry ingredients and add to first mixture.
Add vanilla and mix well.
Pour into one large greased loaf pan or two small ones.
Bake at 350\u00b0 for 1 hour. This is like good raisin bread.
