Avgolemono Soup(Egg Lemon Rice) - cooking recipe

Ingredients
    1 c. rice
    8 c. chicken broth
    2 eggs
    juice of 3 lemons
    1 Tbsp. cornstarch
    salt and pepper
    2 c. hot water
Preparation
    Cook rice
    in
    chicken\tbroth
    until tender.
    Turn down heat. Beat
    eggs and combine with lemon juice and cornstarch, adding 2 cups
    hot
    water
    and
    mix\twell.
    Slowly add the egg mixture to the soup, vigorously stirring with a wire whip for 2 minutes. Turn heat off.
    Use whole grain rice (Uncle Ben's) or parboil rice.
