Banana Ginger Muffins - cooking recipe

Ingredients
    2 medium, ripe bananas, mashed
    1/3 c. maple syrup
    2/3 c. orange juice
    1/3 c. applesauce
    2 tsp. ginger
    1 medium lemon
    2 c. whole wheat pastry flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
Preparation
    Preheat oven to 350\u00b0.
    Prepare muffin pan with paper muffin cups.
    In medium bowl, combine bananas, maple syrup, orange juice, applesauce, ginger and lemon.
    Mix the flour, baking powder, baking soda and salt together in a large bowl.
    Add the banana mixture and mix.
    Do not overmix.
    Spoon the batter into paper muffin cups, filling each cup about 3/4 full.
    Bake 20 to 25 minutes.
    Test with a toothpick.
    Cool.
    Makes 12 muffins. Calories: 137.
