Hunter Veal - cooking recipe

Ingredients
    1 Tbsp. butter
    2 Tbsp. olive oil
    4 medium veal scallops, cut in strips 1-inch wide
    1 dry shallot, peeled and finely chopped
    3 Tbsp. flour
    2 c. chicken stock, heated
    1/4 c. sour cream
    1 tsp. chopped fresh parsley
    salt and pepper
Preparation
    Optional:
    Serve with biscuits or over noodles.
