Carrot Bars - cooking recipe

Ingredients
    1 c. vegetable shortening
    3/4 c. sugar
    1 egg
    1 c. carrots, cook and mash before measuring
    2 c. + 2 Tbsp. flour
    2 tsp. baking powder
    1/2 tsp. salt
    1 tsp. vanilla
    1 c. coconut
Preparation
    Cream shortening, sugar and eggs.
    Add vanilla.
    Mix dry ingredients.
    Add carrots and dry ingredients, alternating; mix. Add coconut.
    Bake 20 minutes at 325\u00b0 in 9 x 13-inch greased pan.
