Prime Ribs Of Beef With Au Jus - cooking recipe

Ingredients
    1 (10 lb.) standing rib roast
    4 garlic cloves
    1 tsp. sea salt (coarse ground)
    1 tsp. cracked pepper
    1/2 c. red wine
    1/2 c. beef stock (unsalted if canned)
Preparation
    Remove any roast wrappings and wipe surface with paper towel. Peel garlic and cut into narrow slivers with tip of sharp knife. Poke holes all over fatty parts of meat and insert garlic.
    Rub roast with salt and pepper.
    Put roast, rib side down, in roasting pan.
    Place pan on middle rack of preheated 500\u00b0 oven.
    Roast for 30 minutes.
    Lower oven to 350\u00b0 and continue to cook for 1 1/2 to 2 hours depending on doneness you prefer.
    Use a meat thermometer where it will not hit rib bone or fat.
