Apple Pickle - cooking recipe

Ingredients
    1 peck ripe, firm apples
    2 qt. vinegar
    4 lb. sugar
    1/2 oz. mace (unground)
    1/2 oz. cloves (unground)
    1/2 oz. allspice (unground)
    1 tsp. mustard seed
    few grains pepper
    salt to taste
Preparation
    Peel apples evenly and if perfect, leave them whole. Otherwise, cut in quarters.
    Heat the vinegar and sugar until it boils; skim well.
    Put the spices in a thin muslin bag and add to vinegar, then add all the apples.
    Cook slowly until fruit is done.
    Put in fruit jars.
    Boil syrup down and pour over the fruit; seal while hot.
