Granola Muffins - cooking recipe

Ingredients
    1 c. granola
    1/2 c. snipped dried apricots or raisins
    1/2 c. boiling water
    1 3/4 c. flour
    1/2 c. sugar
    1/2 c. chopped walnuts
    1 Tbsp. baking powder
    1/2 tsp. salt
    1 beaten egg
    2/3 c. milk
    1/2 c. cooking oil
Preparation
    In mixing bowl, combine the granola and the apricots, pour boiling water over.
    Set aside.
    In another bowl stir together the flour, sugar, nuts, baking powder and salt.
    Make a well in the center.
    Stir egg, milk and oil into fruit mixture.
    Add all at once to flour mixture.
    Stir just until moistened.
    Spoon into greased muffin tins.
    Fill 2/3 full.
    Bake at 375\u00b0 for 20 to 25 minutes.
    Makes about 18 muffins.
