Sweet Potato And Apricot - cooking recipe

Ingredients
    sweet potatoes, halved
    1 1/4 c. brown sugar
    1 1/2 Tbsp. cornstarch
    1/2 tsp. salt
    1/2 tsp. cinnamon
    1 Tbsp. grated orange peel
    1 lb. can apricots
    2 Tbsp. butter
    1/2 c. pecans
Preparation
    Place
    cooked
    sweet potato halves into buttered baking dish. Combine
    brown
    sugar,
    cornstarch,
    cinnamon, salt and orange peel in saucepan.
    Drain apricot juice into cornstarch mixture. Cook
    and stir over medium heat until boiling.
    Boil 2
    minutes. Add
    apricots, butter and pecans; pour over sweet potatoes.
    Bake at 325\u00b0 for 25 minutes.
