Irish Tea Scones - cooking recipe

Ingredients
    2 1/2 c. sifted all-purpose flour
    2 Tbsp. sugar
    1 Tbsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    4 Tbsp. (1/2 stick) chilled butter, cut in small pieces
    1 large egg
    1 egg white, beaten with 1 tsp. water
    2 tsp. sugar (optional)
    2/3 to 3/4 c. buttermilk
Preparation
    Preheat oven to 425\u00b0.
    In large bowl, sift or stir together first 5 ingredients.
    Cut in butter until mixture resembles coarse crumbs.
    Make well in center; set aside.
