Puffed Chicken Sandwiches - cooking recipe
Ingredients

1 2/3 c. chopped, cooked chicken or turkey
1/3 c. mayonnaise
salt and pepper to taste
1/2 c. minced celery
1/4 c. cut onion tops
1 1/2 Tbsp. lemon juice
softened butter
3/4 c. (3 oz.) shredded Cheddar cheese
6 slices bread
3 egg whites
Preparation

Combine first 6 ingredients in a small mixing bowl; mix well. Toast 1 side of bread lightly; butter untoasted side.
Spread chicken mixture over butter.
Beat egg whites until stiff peaks form.
Fold in cheese.
Spread over chicken mixture.
Bake at 450\u00b0 for 10 minutes or until golden brown.
Serve immediately.
Yields 6 servings.
