Creole Beans - cooking recipe
Ingredients

6 c. water
1 lb. dried large lima beans
3/4 c. chopped onion
1/2 c. diced green pepper
1 tsp. seasoned salt
1 Tbsp. flour
salt and pepper
2 tsp. prepared mustard
1 tsp. Worcestershire sauce
2 Tbsp. brown sugar
2 1/2 c. canned tomatoes
Preparation

Bring water to boil and add beans.
Boil 2 minutes.
Cover and let stand 1 hour.
Return to heat and simmer, covered, until tender, a fork pierces a single bean easily; drain.
Saute onion and green pepper in a little oil.
Stir in flour, seasonings and sugar.
Add tomatoes and simmer, uncovered, for 10 minutes.
Stir in cooked beans; heat through.
Makes 8 servings.
