Ingredients

2 c. coarsely grated zucchini
2 large eggs, beaten
1/4 c. minced onion
1/2 c. unbleached flour
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. oregano
oil
butter or margarine
lemon wedges
Preparation

Place zucchini in strainer and press out as much moisture as possible.
Mix with eggs and onion in small bowl.
Combine dry ingredients and stir into zucchini-egg mixture.
Heat oil on griddle or in skillet over medium heat.
Drop dough by tablespoon and brown lightly on both sides.
Serve immediately with butter and lemon wedges.
