White Chili - cooking recipe

Ingredients
    1 lb. white Great Northern beans
    1 (2 to 2 1/2 lb.) chicken
    5 c. chicken broth
    1 medium white onion, diced
    1 c. chopped celery
    2 Tbsp. ground cumin
    1 Tbsp. thyme
    1 Tbsp. seasoned salt
    1 Tbsp. white pepper
    2 bay leaves
    1 pt. heavy cream
    shredded Cheddar cheese
    shredded Monterey Jack cheese
    diced red onion
Preparation
    Rinse beans.
    Place in kettle and cover with water.
    Soak at least 24 hours.
    Drain.
    Cut chicken into pieces and put in a pot. Cover with at least 5 cups water.
    Bring to a simmer and cook until tender, about 30 minutes.
