Ingredients

3 c. grated potatoes
1/2 tsp. salt
1/8 tsp. pepper
1 egg, beaten
2 Tbsp. oil
flour
Preparation

Mix together potatoes, salt and pepper.
Add egg and enough flour to thicken batter.
Heat oil in skillet.
Drop mixture by teaspoonfuls into skillet.
Cook until evenly browned on both sides.
