Shrimp And Vegetables - cooking recipe
Ingredients

2 lb. red potatoes, cut into 1 1/2-inch chunks
2 medium-sized red and/or green peppers, cut into 3/4-inch wide strips
2 Tbsp. salad oil
salt
1/2 medium-size bunch green onions
1 1/4 lb. large shrimp
Preparation

Preheat oven to 450\u00b0.
In a large roasting pan, toss potatoes, peppers, salad oil and 1 teaspoon salt.
Roast vegetables in oven for 30 minutes, stirring once halfway through cooking time. Meanwhile, slice green onions; peel and devein shrimp.
In bowl, toss green onions, shrimp and 3/4 teaspoon salt.
Stir shrimp mixture into vegetable mixture; roast 10 minutes longer or until shrimp are opaque throughout and potatoes are fork-tender.
Makes 4 main dish servings.
