Spiced Carrot Soup - cooking recipe

Ingredients
    1/4 c. onion, minced
    1 tsp. butter
    5 medium carrots, thinly sliced (3 to 4 c.)
    1/2 tsp. fresh ginger, minced
    2 c. summer soup stock
    1 c. orange juice
    2 tsp. lemon juice
    1/8 tsp. cinnamon
    strips of orange peel
    fresh mint
Preparation
    Saute the onion in the butter until softened.
    Add the carrots and ginger and cook an additional 2 minutes.
    Add the soup stock and simmer for 15 minutes.
    Whirl in a blender or processor until fairly smooth.
    Add the juices and cinnamon, then blend again. Chill.
    Garnish with orange peel and a mint sprig if desired. Serves 4 to 6.
